Peppermint Schnapps Decadent Hot Chocolate

Bump day icon Did I tell you I’m headed to Colorado this December for vacation? We’re spending two weeks just before Christmas (will have Xmas here in Barbados) surrounded by snow and glorious holiday decorations. I can’t wait! 

That means though that I’ve spent the past week rummaging through the Internet for very cheap (maybe even second hand) ski clothes for the family. We’re not skiers so cheap is the operative word since it’s really, really unlikely I’ll ever wear snow boots again anytime soon (and saddly my UGGS, which are shoved in a box somewhere in a closet, just won’t cut it).

Anyway, all that winter shopping reminded me that I should start loading up on all my winter favorites, including hot chocolate! I just found out Ree already has a full stock pile of hot chocolate she brought from Canada in her pantry! I’m feeling very late to the game!

So when I’m in the states next week for a friend’s wedding, I’ll be running to a few stores to grab some of the winter essentials – evergreen candles, cheesy holiday movies (well, the ones I don’t already own), and of course the ingredients for the best hot chocolate recipe ever!

Delightfully Refreshing Kiwi Daiquiris

Bump day icon Summer is in full swing here in Barbados, which means it is hot and super muggy. This is our rainy season and some days the humidity is completely unbearable. While hydrating with good ‘ol H2O is best, weekends by the pool call for something a little more fun. And with the Corona prices at a premium for us these days ($18US for a 6 pack!), I’ve had to turn to the cheaper, more plentiful rum for refreshment.

How’s your summer going? Is it alright? I hope your answer is a resounding “YES!”  Since you’ve been experiencing the weather that Bre and I are lucky enough to enjoy year-round, I thought it would be fun to share with you a drink that we also enjoy year-round.

Our tiny island doesn’t produce much, thanks to a soil that’s made of limestone and coral. But one thing we do grow a lot of is sugar cane. It’s a huge part of the Bajan culture and steeped in tradition. Every year there’s even a celebration, called Crop Over, which celebrates the traditional end of harvesting season. Any reason for a party!

Skinny Strawberry Mojitos

Whenever I think of summer, I think of gorgeous, colorful fruit. And then I’m quickly overcome with nostalgia remembering summers eating watermelon at family barbecues, and picking strawberries and peaches at the nearby farms. Even though I’m an expat living on what seems like a never-ending-summer island, I still get excited for summer and it’s delectable fruit. Surprisingly, most of our fruit is brought in, so come summertime the shelves are finally full and the prices are quite reasonable. Yes, it’s still more than what I’d pay in the states, but the prices no longer make me cringe. 

About a couple years ago a modern restaurant opened here in Barbados, and I fell in love with their strawberry mojitos. And so as I stumbled upon strawberries on sale at the local market, I attempted my own lower-calorie version this past weekend. It came out brilliantly, and it’s now my new favorite summer cocktail.

Berry Green Smoothie

It’s Wednesday! Around here, we call it “bump day.” Each and every Wednesday we’ll post a tip, trick, gadget, or something fun and random to get you through the rest of the week. 

It’s Valentine’s Day on Friday, so I thought I’d create one of my favorite smoothies for the occasion. And guess what? Because of the holiday, strawberries are on sale at the grocery store (one of the main ingredients)! They were originally $11 for a carton, but now they are $10. Woo-hoo, time to celebrate!
